Dried pumpkin cookies

Steps

1 c boiling water
1 c dried pumpkin powder
½ c butter
1 c cane juice crystals
1 egg
1 t vanilla
2 c whole wheat pastry flour
½ t sea salt
1 t baking powder
1 t baking soda
1 t ground cinnamon
2 c chopped dried peaches or apricots or sometime I use white choc chips

Pour boiling water over pumpkin powder. Let soak for 30-45 min. cream butter and cane juice till fluffy. Add egg and vanilla, blending thoroughly. In another bowl, combine flour, salt, baking powder, baking soda, and cinnamon. Add chopped dried fruit. Add pumpkin mixture to creamed mixture. Add dry mix to creamed mix 1 c at a time beating well after each addition. Drop by spoonfuls onto greased cookie sheets and bake at 350 for 12-15 min

You can also add a tsp or more to your favorite fresh pasta recipe.

Use it breads, pancakes, waffles, soups, etc.!
